Parsley - Pistachio Pesto


Handful parsley

1/4 pistachios, toasted

1/2 cup olive oil

Salt to taste

Pepper to taste

1 lemon, juiced

1/4 cup parmesan cheese

1 small garlic clove


Preheat oven to 350 F.

Toast the pistachios for 8-10 minutes. Make sure you keep your eye on the pistachios to ensure the nuts do not burn.

In a food processor or blender, add parsley, toasted pistachios, parmesan cheese, lemon juice and garlic clove. Pulse. While pulsing, drizzle olive oil and blend until smooth.

Season with salt and pepper.
