Sweet Potato and Avocado Toast
The era of avocado toast is close to the end.
Avocado toast are not as popular anymore. We don’t see this trend on social media as often or restaurants promoting these its most selling menu item. The reason may be because giant pancakes or hot chicken sandwiches may be taking over the food culture, but I refuse to say goodbye to the beloved avocado toast because it is the easiest, quickest and most satisfying breakfast.
I simply love avocado toast, but I wanted to mix it up a bit. I don’t remember exactly where I got the inspiration to add sweet potato to my toast. It may have been from a movie, commercial or maybe an Instagram post, whichever way I got the inspiration I am thankful it crossed my eyes.
The mix of spreads gives the dying trend a refreshed look. This really satisfied my hunger the morning I made it and kept me full until my next meal. I love eating meals that fill me up for hours, not meals that have me hungry in minutes. I usually cook for my sister and myself, and she is also a fanatic of avocado toast and loved this mixed toast idea.
The mixed spreads is so delicious that I began mixing sweet and savory on the mornings I wake up with a sweet tooth. Ill spread jam on one toast and avocado on the other. Start to finish: 8 minutes
2 slices of Whole Wheat bread (I used Eureka Grainiac Organic Bread)
1/2 sweet Potato
5 cherry Tomatoes
First, toast the bread.
Use a fork to mash the avocado. Season the guacamole with salt and pepper. Set aside.
Peel and dice sweet potato, season with garlic salt and place in microwave for 3 min (I know that microwaves are not the best when it comes to our bodies, but it is the quickest way to cook a sweet potato). Then mash with a fork. Set aside.
Scramble the eggs to your liking.
On one toast spread guacamole and spread sweet potato on the other. Place scrambled eggs over toast and garnish with cherry tomatoes and parsley.
