Tofu Pesto Grilled Cheese
This actually came to mind when I was craving a grilled cheese, but I did not want all the calories that comes in a grilled cheese, so I thought of pesto. When I made the pesto I thought of adding my protein into my pesto, which was tofu. Surprisingly, this came out DELICIOUS! Especially when eaten with Sriracha, well what doesn't taste good with Sriracha, right? This satisfied my craving and ended up being one of my favorites. Everyone in my house loved it and best of all they did not know that tofu was included, which is the best because the pickiest of eaters would not know what they are actually eating since it is masked with loads of flavor. So with that being said, lets get to the recipe!
Ingredients: (Pesto lasts for a good 3 days in glass container)
2 Slices Whole Wheat Bread (Make sure the bread does not contain CORN SYRUP or HIGH FRUCTOSE CORN SYRUP)
1 Cup Fresh Basil
2 Tbspn Olive Oil
1 Garlic Clove
1/3 Cup Pine Nuts
Small Sprinkle of Parmesan Cheese (Can also use Daiya Vegan Cheese for Vegan option)
1/2 Package of Firm Tofu (Any level of tofu is fine because it is blended either way)
Salt & Pepper to liking
Food Processor (Can substitute for a blender)
Panini Press ( Can cook on stovetop as well)
1. In the food processor add basil, garlic clove, toasted pine nuts (lightly toast pine nuts in a pan over medium heat), tofu, salt & pepper, cheese, olive oil and lemon juice. Pulse in food processor. Taste to see if it's seasoned to liking.
2. Once seasoned to liking, spread as much pesto as you want onto bread. I love my grilled cheese sandwiches with tomato and spinach, so I added that along with the pesto. Then Cook as if you would a grilled cheese or place into panini press on high heat until bread becomes a nice crispy golden brown.
3. Eat with Sriracha. That is it. You have tofu pesto grilled cheese sandwich!
