Veggie Gyro

Gyros are probably one of favorite dishes I love to order anywhere I go and I even love making them at home. Every time I make gyros, it comes out different. I love to stuff gyros with anything I have in the kitchen that day or whatever I feel like eating that day. Today, I wanted something that will fill me up, so I thought of mushrooms and spinach. Now, lets get to the recipe! 


1 Whole Wheat Pita

1/4 White Onion

Handful Spinach

1/2 Yellow Bell Pepper

1/2 Red Bell Pepper

1 Garlic Clove

1 Tbspn Grape Seed Oil

Salt & Pepper to taste

Guacamole Ingredients: 

1/2 Guacamole

Jalapeño Juice (Comes in a can mixed with carrots & jalapeños)

1/2 Tomato


1. First, make the guacamole. Mash the avocado with a fork, add diced tomato, and season with jalapeño juice, salt, & pepper. Place in refrigerator until needed.

2. In a pan over medium heat, pour the grape seed oil, once oil has heated, cook garlic clove and diced onion until onion becomes translucent. Season with salt & pepper. Then add diced bell peppers, cook for about 2 min and add diced button mushrooms. When mushrooms cook, add the spinach last, cook until spinach wilts down (takes about 1-2 min to wilt). Place aside.

3. Heat pita. Begin to layer your filling. I first layered the  guacamole then the veggie mixture. Wrap like a gyro, you are done!
