Sweet Potato and Avocado Toast
2 Slices of Whole Wheat bread (I used Eureka Grainiac Organic Bread)
1/2 Sweet Potato
Salt & Pepper
5 Cherry Tomatoes
Parsley to garnish
First, toast the bread.
Meanwhile, mash the avocado with a fork and season with salt and Pepper. Set aside.
Peel & dice sweet potato, season with garlic salt and place in microwave for 3 min (I know that microwaves are not the best when it comes to our bodies, but it is the quickest way to cook sweet potato). Then, mash with a fork. Set aside.
Scramble the eggs to your liking.
On one toast spread guacamole. On the other spread sweet potato. Place scrambled eggs over toast and garnish with cherry tomatoes and parsley.
