1 Whole Wheat Pita
1/4 White Onion
Handful of Spinach
1/2 Yellow Bell Pepper
1/2 Red Bell Pepper
1 Garlic Clove
1 Tablespoon Grape Seed Oil
Salt & Pepper to taste
Jalapeño Juice (Comes in a can mixed with carrots & jalapeños)
First, make the guacamole. Mash the avocado with a fork, add diced tomato and season with jalapeño juice, salt and pepper. Place in refrigerator until needed.
In a pan over medium heat, pour the grape seed oil and when the oil has heated, cook garlic clove and diced onion until onion becomes translucent. Season with salt & pepper.
Add diced bell peppers, cook for about 2 min and add diced button mushrooms. When mushrooms cook, add the spinach last, cook until spinach wilts down. The spinach wilts in about 1-2 minutes. Set aside.
Heat the pita.
Begin to layer your filling. I first layered the guacamole then I added the veggie mixture. Wrap like a gyro, you are done.
