Breakfast Burrito

Ingredients:

2 Eggs

1 Whole wheat wrap/tortilla (Substitution: Ezekiel wrap)

1/2 Avocado

1/4 Bell pepper (Red, Yellow, Orange, or Purple)

Homemade Tomato Salsa Ingredients:

3 Tomatoes

1-3 Tablespoon Jalapeño Juice (Depends on desired spicy level)

Salt & Pepper to taste

1 Whole Jalapeño

1 Lime

Instructions:

Make scrambled eggs and season with salt & pepper.

In a blender, throw in the three tomatoes. Slice the tomatoes in half to help blender blend faster. Also add jalapeño juice, jalapeño, salt, pepper, and lime juice. Blend. Leave the salsa a bit chunky.

Heat up the whole wheat tortilla. Then add scrambled eggs, top with sliced avocado, salsa, and sliced bell pepper. Fold it in a burrito form, which is done by folding in the sides and rolling forward.
