Blueberry and Banana Oatmeal


1/2 Cup Rolled Oats (Substitution: Steel Cut Oats)

1 cup Water

1 teaspoon Cinnamon

1 Banana

1 tablespoon Chia Seeds

2 tablespoon Ground Flax Seeds

1 teaspoon honey

Toppings (Optional):

1/4 Cup Frozen Blueberries

1/2 Banana

Sprinkle shredded unsweetened coconut


In a small pot, fill with 1 cup of water, 1/2 cup rolled oats, cinnamon, and banana. Mix together. Cook over medium-high heat until oats come to a boil, for about 5 minutes. Make sure not to over cook the oats because the oats get dry. In order to avoid dry oats, leave the oats a bit watery because oats continue to absorb the liquid after the oats are removed from the heat.

Once the oats are cooked, throw in chia seeds, flax seeds, blueberries, and honey. Mix together.

Optional: Top with blueberries, banana and dried coconut.
