2 cups All-Purpose flour
2 Teaspoon baking powder
1/2 Teaspoon salt
1/2 cup (1 stick) unsalted butter, melted
2 tablespoons sugar
1 teaspoon baking soda
2 cups buttermilk + 3/4 cup
1 Teaspoon Vanilla extract
1 cup blackberries + 1/2 cup for garnish
First, start to preheat your waffle iron because this way the waffle iron is ready by the time your batter is done. Also, melt the stick of butter in the microwave, set aside to cool.
Then make the blackberry puree. In a magic bullet or blender, add 3/4 buttermilk and 1 cup of blackberries. Blend together. Strain the puree because if you do not strain the puree, you will have seeds in your batter. Set the strained puree aside.
In a large bowl add the flour, baking soda, baking powder, eggs, butter, blackberry puree, salt, sugar and buttermilk. Whisk together, but be careful to no over mix your batter because the batter will be too runny. Leave lumps in your batter. Let the batter sit for 5 minutes.
After 5 minutes, grease your waffle iron with cooking spray, melted butter or oil. Add 1/4 cup to each square or as much as your waffle iron can hold. Cook the waffles according to your waffle iron. I cooked mine for 5 minutes.
Once all the waffles are done cooking, place on a wooden board and add your favorite toppings. I added maple syrup, homemade peanut butter, mini chocolate chips, powder sugar over the top and additional blackberries to garnish.
