Eggs & Toast
When it comes to eggs and toast, it can sound and look somewhat boring and typical, but when adding different spreads to the toast and adding garnishes, it makes this typical, boring breakfast into a delicious and new dish. So to get to the recipe, I will leave this intro short, and with that said, here is the recipe!
Ingredients: (Serving: 1 Person)
2 Slices of Whole Wheat bread (I used Eureka Grainiac Organic Bread)
1/2 Sweet Potato
Salt & Pepper
5 Cherry Tomatoes
Parsley to garnish
1. Toast Bread.
2. Mash avocado with fork, season with salt & Pepper. Set aside.
3. Peel & dice sweet potato, season with garlic salt and place in microwave for 3 min (I know that microwaves are not the best when it comes to our bodies, but it is the quickest way to cook sweet potato). Then, mash with fork. Place a side.
4. Scramble eggs to your liking.
5. On one toast spread avocado. On the other spread sweet potato. Place scrambled egs over toast and garnish with cherry tomatoes and parsley.
