Breakfast Burrito

In the mornings, especially weekdays, not many, including myself, have time to make an elaborate breakfast, so this breakfast breakfast is quick, easy, and best of all scrumptious. You will devout this in less that five minutes, I promise you that. Just because something is quick, it does not mean that it has to be bland, colorless, and a pain to eat. Like I said in my "About Me" cooking is supposed to be fun and a way to be creative with your food. Bring color, life, and flavor to the meals you are putting into your body. I always say people eat with their eyes, so why not make it pretty. Even if you only have five minutes to make breakfast, put love into your food, trust me it will always taste better. Back to the burrito, this morning I only had about ten minutes to make breakfast, so I thought of an egg burrito. You are probably thinking, breakfast burritos are always plain and not always good when made at home. Well I amped up this burrito with a few extra ingredients I like keeping in my fridge. One, homemade tomato salsa (make before hand if possible, for time purposes, but do not have to. The salsa is actually simple to make). Two, avocado. Lastly, raw bell peppers.  Now, lets get to the recipe, just so you can see how quick a nd easy it is!

Ingredients: (1 person)

2 Eggs

1 Whole wheat wrap/tortilla (can sub for Ezekiel wrap)

1/2 Avocado

1/4 Bell Pepper (Red, Yellow, Orange, or Purple)

Homemade Tomato Salsa Ingredients

3 Tomatoes

1-3 Tbspn Jalapeño Juice (Depends on desired spicy level)

Salt & Pepper to taste

1 Whole Jalapeño

1 Lime

Instructions:

1. Make scrambles eggs, seasoned with only salt & pepper.

2. In a blender, throw in the three tomatoes (Cut in half to help blender blend faster) jalapeño juice, jalapeño, salt, pepper, and lime juice. Blend. Leave a bit chunky.

3. Heat up whole wheat tortilla. Then add scrambled eggs, top with sliced avocado, salsa, and sliced bell pepper. Fold it in a burrito form (Fold in sides & roll forward) , cut in half (if you want), and you are done.
