Here is the aioli recipe I promised on my last post. Let me tell you how useful this aioli is when it comes to wraps, sandwiches, burritos, nachos, and even breakfast dishes. It is one of those things that you will want to put on everything you eat. Trust me. I usually make a Sriracha aioli, but when I was making the veggie sandwich I wanted something different. I began looking through my pantry when I found a small can of chipotle chilis, and I thought hey! this will the heat I was looking for into my sandwich. I was right, it was the perfect touch, so here is the recipe to this chipotle aioli.
1 Whole Egg
1 Tablespoon of Dijon Mustard
1 SMALL Garlic Clove
1/2 cup of Grape Seed Oil (I know it sound like a lot,but this makes a large amount. Also I do not recommend sub for olive oil because it gives a strange taste)
1 can of Chipotle Chilis (Use about 3-4 or more, depend on level of heat you want)
1 Pinch of Salt or to your liking
NOTE: Can also use blender or magic bullet, if you do not have a food processor.
1. In the food processor, first throw in garlic clove, dijon mustard, and egg. Pulse until smooth.
2. While it is pulsing, drizzle in the 1/2 cup of grapeseed oil. Once the oil have been incorporated, stop the food processor and put in 3-4 chipotle chilis. Pulse again until the chilis are also incorporated.
3. Then taste and add salt according to your liking.
4. Refrigerate for 30 min before using.
