Couscous & Tuna

Today, I got home from work craving something fresh and quick to make, so I thought of tuna. Tuna s fresh, quick to make, and so versatile, but then I did not know what to eat the tuna with. When I opened the cabinet to grab salt, I saw a box of Mediterranean couscous. I usually do not opt for boxed pre-made food that include packet seasonings, but the box and ingredients all sounded clean to me,so I decided to use it. Let me tell you, good thing I did because it was actually really good. I even wanted seconds, but I didn't because I had already had my portion size of my carbs, but I sure did have this for lunch the next day. Here is the recipe to this quick and easy lunch/ dinner!

Ingredients: (Serving: 1 Person)

1 Can of Tuna in WATER

Handful of Cherry/Grape Tomatoes

1 Box of Mediterranean Couscous

1 Persian Cucumber  (Can also use 1/2 of regular cucumber)

1/2 Yellow Bell Pepper

1 Lemon or Lime

Salt & Pepper

Instructions:

1. Cook the couscous according to box instructions. This should take about 10-15 min.

2. While that cooks, Season the tuna with lemon, salt, & Pepper. Place aside.

3. Then dice bell pepper, cherry tomatoes, & cucumber.

4. Once the couscous is ready mix in all veggies. Place tuna on side or mix in as well.

Then you are done. This is  easy and quick, which is perfect on those days that you are tired or do not feel like cooking for hours. It is simple, quick, fresh, and light.
