Quinoa Salad

Here is one of my go-to lunch and even dinner recipes that I love to make. There are two main reasons why I love making quinoa. One, quinoa is versatile, there are many ways to make a good quinoa salad. You can make it savory or sweet, it all depends on what you feel like eating that day. Second, it is the simplest recipe to make when you do not know what to eat. Those two reasons alone are the only reasons you need to make this your favorite as well. Now, lets get to the recipe.

Ingredients: (1 person)

1/2 cup Quinoa

1 Tomato

Handful Parsley

1 Avocado

1/4 Red Onion

7-8 Black Olives

2 Limes

Salt & Pepper

Pinch of Chili Powder

1/2 Bell Pepper (Green, Purple, Red, Yellow, and/or Orange)

Instructions:

1. First, cook 1 cup of quinoa in a pot along with 2 cups water over medium-low heat. Cook for 20 minutes or until quinoa consumes all the water. Fluff with a fork when done cooking. Place aside to cook.

2. Dice the bell pepper, tomato, avocado, red onion, black olives, and thinly chop the parsley. Place all in a bowl along with 1/2 cup of quinoa (You will have extra quinoa leftover). Squeeze in limes, season with salt, chili powder, and pepper to your liking. Mix all together. Then you are done. 

This is why this is my favorite dish to make.
